After months of baking on a small pizza stone with a cast iron pan filled with wet rocks, I am pleased to announce that the Pavailler has arrived from France. It�s not that I don�t enjoy baking bread in a conventional oven, but there really is no substitute for a proper bread oven.

Our Pavailler is a two deck, steam injected oven built for the purpose of baking crusty loaves of bread. Baking directly on the stone oven floor gives the dough a big push, or what it referred to as �oven spring�. During this initial rise, the intense heat from the oven floor causes the yeast to rapidly produce carbon dioxide which fills the individual cells formed by gluten. But the intense heat of the oven floor is not enough for a loaf to expand in the oven. You need steam in the oven chamber to keep the exterior of the dough from prematurely drying and forming a crust before it is fully developed. Hence the pan filled with wet rocks for the conventional oven (pour water over the hot rocks to fill your oven with steam). I�ve traded in my rocks for a button on the Pavailler that automatically fills the oven chamber with steam.

You�ll notice from the picture that the dimensions of the oven chamber are very different than a conventional oven. The low ceiling of the oven puts the dough in much closer proximity to the heat, which in combination with the contact on the oven floor, the loaf can form a nice crust before the crumb is completely dried out. Great bread has a nice crust and a crumb that is cool to the touch.
